The Tormek is excellent for hollow grinding to the edge of a blade, which minimises the amount of steel to be honed. The half-speed grinder is not as good in this department but is more versatile overall. American Woodworker did an evaluation a couple issues ago of the two tormeks, the Jet and the Grizzly.

Wet stone or slow speed grinder?
7985 posts · Joined 2011. #2 · Feb 9, 2023. For turning tools the wet stone is very slow to sharpen, so the slow speed grinders seemed to be more widely used. But for chisels, plane blades, kitchen knives, and most everything else I prefer the wet stone grinder, and for plane blades and most chisels I like the Worksharp even better.
